Instructions
  1. Cook the quinoa in the medium pot. Quinoa cooks at a 1:3 ratio. 1 part quinoa and 3 parts liquid. It should take about 20 minutes to cook fully.
  2. While the quinoa cooks, dice all of the vegetables.
  3. Heat the oil in the sauté pan and lightly sauté the vegetables until they are just softened.
  4. Mix all of the quinoa and vegetables into a bowl. Then, add the seasoning and combine.
  5. This dish can be served warm or cold with a sprig of cilantro on top!
